Now, I do not suggest these for Sunday breakfast but Banh Xeo (Vietnamese Pancake) is the stuff of legend. These flour crepes, stuffed with bean sprouts, prawns, pork, mushrooms, mint, basil, and hot pepper, will be making you lick every morsel off your lips, fingers, and chopsticks. During our trip to the Mekong Delta we stopped by a family friend of our tour guide/co-teacher for lunch. This teenie tiny elderly woman cooked up a whole stack for us in her small kitchen and laughed at us as we devoured every bite!
